Paneer and Mixed Vegetable Frankie

During our last India trip we got a chance to had this mixed veggie and paneer frankie in a chaat house in Chennai.It was so delicious and my kiddo liked it a lot.After couple of weeks I saw the same recipe in a cookery show in T.V and made it with some alterations.The original recipe is a deep fried version instead I shallow fried the the stuffing.It came out perfect and it is ideal for evening snack or brunch.Now to the recipe.....

Ingredients

Green peas(cooked&mashed)1/3cup
Carrot(grated)1/4cup
Onion1no.(medium size)
Green chilly(chopped)2nos.
Ginger&garlic paste1/2tsp
Red chilly powder1/4tsp
Garam masala powder1/8tsp
Turmeric powder1/8tsp
Dry mango(amchur)powder1/4tsp
Corianderleaves(chopped) as needed
Cumin seeds1/2tsp
Corn flour1tbs
Saltto taste
Oil1tbs

For the outer layer
IngredientQuantity
All purpose flour(maida)11/2 cups
Salt1/2tsp
Oil1tbs
Waterto knead

To Serve

IngredientQuantity
Onion(finely chopped)1no.(medium size)
Green chutney2tbs
Chaat masala powderto taste
Amchur powderto taste



Method

                       Mix the maida,salt and oil,make a soft dough and rest it for 30 minutes.Make rotis out of it and this is the outer wrap,keep it aside.

Keep a pan with 1tbs of oil and once it becomes hot crackle the cumin seeds,add the green chillies and ginger&garlic paste,fry it for a minute.Then add the beans,grated carrot and mashed green peas,saute along with the salt.Cover it and cook it for 2 minutes till the veggies get tender.
Add in the mashed potatoes,turmeric powder,chilly powder,garam masala powder and amchur powder,mix it.Add the grated paneer and mix it well,cook it for 2-3 minutes stirring in between.Finally add the coriander leaves and let the mixture to cool completely.
Now sprinkle the corn flour and mix it well,divide into 16 equal portions and make a 2 inch oblong shape.Shallow fry with oil till golden color.Drain it on a paper towel.
Now mix the chopped onion,amchur powder and chaat masala,keep it aside.
Take one roti on a plate or on a flat working surface and apply mint chutney,place two veggie and paneer roll.Sprinkle the onion mixture and roll it tightly and wrap in a tissue paper or aluminum foil.
Serve it immediately.


  • In the original recipe both the outer layer/wrap and the stuffing is deep fried.
  • Adding the mint chutney is purely optional instead ketchup or sweet and hot chutney can be used.
  • For the outer layer chappathis or store bought tortillas can also be used.

Cauliflower Onion Pakoda

We are entering the last week of blogging Marathon #50 and for this week I chose,pick one category or do 3.For this theme already 3 set of lists such as snack,potato based and fried were given.We need to choose either 3 dishes from the same category or one from each of the list. For day 1 I am sharing  a pakoda with sliced cauliflower and onions,as its listed  in the snack category.As we had a snow last week we wanted to have some crunchy snack.So made this pakodas for evening snack along with a cup of tea.
