Shahi Rabri


Today's recipe is going to be very simple,exotic and delicious sweet which can be made in no time in the microwave oven.It's Shahi rabri for the 5th day of blogging marathon#12.

It is a special post for me.Yes...this is my 100th post,I am so happy and excited.I am so much thankful to my readers and blogger friends for their support and encouragement.

Shahi rabri is a rich creamy and flavorful dessert which is easy to make,perfect for parties.I got this recipe from Tarladalal cook book and the recipe follows.

Ingredients

Milk1cup
Evaporated milk1cup
Paneer/cottage cheese(grated)11/4cup
Condensed milk1/2cup
Sugar 3tbs
Saffron4-strands
Cardamom Powder1/4tsp
Rose essence(optional)few drops
Ghee1tsp

For Garnishing
IngredientQuantity
Almonds(chopped)1tbs
Pistachios(chopped)1tbs



Method

                        Soak the saffron in a tsp of warm milk.Put everything in a microwave safe large bowl except saffron and cook it in microwave oven for 6-7 minutes.In between stir it couple of times.Finally add the saffron to it.
Let it cool down completely,garnish it with pistachios and almonds.Refrigerate for 2 hours and serve it chilled.

  • Use a large microwave safe bowl and fill 1/4 th,otherwise it may spill while cooking.
  • Here I used 2% of milk which can be substituted with whole milk.
  • Initially the sweet will be slightly thin after refrigeration it becomes thick.

Coming to day 2 recipe for the blogging marathon#62,themed under no tomato gravy is a rich and creamy cauliflower aka gobi masala. As my family loves cauliflower,so it appears in my kitchen frequently in some form.I tried this cauliflower curry without tomato and used yogurt and cashews paste.The result was such an awesome and creamy curry.
